Avgolemono soup is a chicken base soup in which you’ll add some fresh squeezed lemon juice and egg. It’s a healthy, citrusy, clear soup which serves for a perfectly light diner.

My avgolemono recipe- ingredients for 2 servings:

1 piece of chicken breast (around 250g) - 1 carrot - 2 celery sticks - 1/2 white onion - 2 garlic cloves - 500ml chicken broth - 2 bay leaves - 1 egg - juice of 1 lemon - Orzo pasta - salt and pepper - dill

How to make your Avgolemono πŸ‘©πŸ»β€πŸ³


β€”> pre-boil the chicken breast for about 10 min until tender then set it aside
1. Heat up a Dutch pan (or any type of pan) and pour some olive oil.
2. Cut the onion, carrot and celery and add it to the sizzling oil until cooked through
3. Cut the garlic and add it to the mix for a minute
4. Add the chicken broth, bay leaves and the pre-boiled chicken + salt and pepper if needed
5. Cooking the Orzo:
- If you decide to cook the Orzo pasta IN the mix, let the mix simmer first for around 15 min, then add the Orzo for the remaining 7 min (or whatever is written on the packet)
- If SEPARATE (which I prefer to avoid the orzo getting mushy when warming the leftovers) simply bring some water to boil in another pan and cook it according to the instructions
6. Squeeze the juice out of the lemon, break the egg and whisk it with the lemon juice until smooth texture
7. SLOWLY add 2-3 ladles of the soup to the egg-lemon mix WHILE whisking! This will prevent the eggs from cooking and scramble!!
8. Add the egg-lemon mix to the soup and immediately take away from the heat
9. Serve with some dill ☺️
